Central Restaurante
Central Restaurante, located in the Barranco neighbourhood, was ranked first among the 50 best restaurants in the world in 2023. Its founding chef, Virgilio Martínez Véliz, strives to reinvent Peruvian cuisine by incorporating lesser-known indigenous ingredients such as arracacha, a root vegetable native to the Andes, and arapaima, a freshwater fish found in the Amazon.
